Match each image makes every page exactly the shape of its picture. No white borders, no letterboxing, nothing cropped. This is what you want for photographed documents, scans and screenshots.
A4, Letter or A5 puts each image onto a standard page, scaled to fit and centred. Use these when the PDF is going to a printer or into a form that expects a normal page size. Anything that does not match the page shape leaves white space at the sides — that is what a margin setting is for.
Images are added in the order your browser hands them over, which is not always the order you picked them. Use the arrows under each thumbnail to move pages around before building the PDF, and check the numbers.

Not supported — browsers cannot decode HEIC reliably. On an iPhone, Settings → Camera → Formats → Most Compatible makes new photos JPG. Existing ones convert when you share or email them.
No. Your JPGs are embedded exactly as they are, byte for byte. PNGs are embedded losslessly too. If the result is large, run it through Compress PDF.
